East Irish Soda Bread
EASY IRISH SODA BREAD
Prep time: 15 minutes
Bake Time: 45 Minutes
One soda bread
Ingredients
4 cups all purpose flour
½ cup butter softened
4 tablespoons white sugar
1 teaspoon baking soda
1 tablespoon baking powder
½ tsp salt
1 cup buttermilk
1 large egg
¼ cup butter melted
¼ cup buttermilk
Directions
Preheat oven to 375 degrees – lightly grease a large baking sheet. I just used parchment paper and it worked just fine.
Mix flour, softened butter, sugar, baking soda, baking powder and salt together in a large bowl. Stir in 1 cup of buttermilk and egg.
Dust your hands in flour – Turn dough out onto a lightly floured surface and knead gently…not too much no more than about 7 or 8 times.and form dough into a round loaf and place on the baking sheet. The dough will be a little sticky.
Combine melted butter with ¼ cup buttermilk in a small bowl and brush loaf with this mixture. Use a sharp knife to cut an X into the top of the loaf.
Bake in preheated oven until a toothpick inserted in the centre of the loaf comes out clean…45 to 50 minutes. (ovens vary….I found 45 minutes just right)
Cool
Slice and enjoy with butter!

SNOW REMOVAL FROM PARKING LOT
We realize the amount of snow that has accumulated over the last month or two has overtaken our parking. Due to several snowfalls over a few days, the snow got so deep that our snow remover couldn’t move it any further.
If he did, it would cost us $175/hr for about five or six hours work, $875 +tax.
The Board has decided to wait it out. The weather is improving. The other alternative to parking in our lot is parking down in the beach’s lot.
Sorry for any inconvenience. We can discuss at the General Meeting next Tuesday.
